Why Pasta di Gragnano is the Best in the World.
Via Italia is proud to be serving Pasta di Gragnano.
The European Union has recognized Pasta di Gragnano to be a PGI product ("Protected Geographical Indication"), meaning "it meets rigorous criteria to earn its label" First, the dough must be extruded through a bronze which gives the pasta a rough texture that helps stick the sauce to each noodle. Second, Gragnano pasta must have high-protein durum wheat which helps keep the pasta al dente while it cooks. Third, the dough must be made with water from Gragnano which is very light in calcium and other minerals, so it doesn't change the structure of the semolina.

Ah, the antipasti platter - grazie mille, Italia! This is probably the perfect way to eat while you're drinking. A little bit of Prosciutto di Parma, a little bit of Salame Biellese Finocchiona, a little bit of Mortadella w/pistacchio, some cheese, like Sheep's Milk Ricotta , Torta al Mascarpone e Gorgonzola , Asiago DOP e Fontina Val d'Aosta , Sicilian Olives from Castelvetrano, artichokes hearts, figs jam, honey with sliced almonds, candy pecans, dry apricots and fresh fruit.- its perfect, its simple.....and now MANGIA!!
